Pani puri enthusiasts, known for their love of experimenting with flavors, are buzzing about a new variation that pushes culinary boundaries. A recent video circulating on social media features a creative twist on this traditional Indian snack, introducing an unconventional ingredient: red ants. This delicacy, enjoyed in certain regions of India, has caught the attention of both Indian and international chefs.

Chef Varun Totlani, who shared the innovative dish on Instagram, described it as a meeting of cultures, saying, “Thai curry meets Pani Puri.” He collaborated with fellow chefs to blend flavors and ingredients that are both familiar and exotic.

Ingredients That Intrigue

In the video, Chef Totlani explains the fusion concept behind this unique pani puri. “We brought the best of both worlds to this Pani Puri. The puri is from India, the stuffing is Thai heirloom tomatoes and fermented beans, and the pani is coconut milk infused with aromatic spices. Finally, it’s topped with tangy fire ants sourced from Chhattisgarh,” he elaborated.

The preparation showcases puris filled with a mix of ingredients, with the traditional tamarind or mint water replaced by creamy coconut milk. The surprising garnish of red ants adds an adventurous flair to the dish.

The post has garnered significant attention, amassing over 65,000 views and nearly 1,000 likes. Reactions from Instagram users have been mixed. While some expressed their distaste, saying things like, “No thank you,” and “Pani puri is an emotion for Indians, don’t ruin it,” others showed curiosity, commenting, “Seems interesting” and “Would love to try.”

One user humorously remarked, “Umm that’s Ant-eresting!” while another cautioned, “Why why why!!! Just because you can doesn’t mean you should!!”

Interestingly, this isn’t the first time red ants have been spotlighted in Indian cuisine. Earlier this year, a dish from Odisha called Kai Chutney, made with red weaver ants, received a prestigious Geographical Indication (GI) tag. This dish is not only unique in flavor but also boasts nutritional benefits, containing zinc, protein, iron, calcium, and vitamin B-12, which can support healthy brain development.
