Was it sunny when you left your office, and did it start raining cats and dogs till you reached home? Well, that’s exactly how the season has been treating us. Rain is beautiful and we all love it, not to mention it often induces cravings of having something warm, cosy, and delightful. But at the same time, the sudden changes in weather also bring sore throat, cold, cough, headaches, and whatnot. 

So, to quench the cravings and clear the soreness in your throats, here are three soups you must try next time it rains.

Red Bell Pepper and Tomato Soup

Tomato Soup

Ingredients:

5 Chopped tomatoes
1/2 onion
2 garlic cloves
1 tbs olive oil
1/2 tbs oregano
1/4 cup fresh cream
4 cups vegetable broth
Salt, pepper, and basil leaves

Method:

Step 1: Sauté onion and garlic in olive oil. 
Step 2: Add tomatoes, oregano, and vegetable broth to the pan with the onion and garlic.
Step 3: Let it simmer for 15-20 minutes and blend the mixture until smooth.
Step 4: Add fresh cream, salt, and pepper and mix well.
Step 5: Garnish with basil leaves. 

Tomato and Carrot Soup

Ingredients:

750 ml water
4 tomatoes
1 carrot
2 garlic cloves
2 celery sticks
1 tbs crushed pepper
1/2 tbs thyme
Salt

Method: 

Step 1: Chop tomatoes, carrots, garlic cloves, and celery into small pieces. 
Step 2: Add them to 750 ml of water with black pepper, thyme, and salt.
Step 3: Bring it to a boil, then simmer for 15-25 minutes, until the vegetables soften.
Step 4: Blend the mixture until smooth, and garnish with basil leaves.

Creamy Mushroom and Potato Soup

Ingredients:

500 g mushrooms
2 small potatoes
1/2 onion
2 garlic cloves
4 cups vegetable broth
1 tbs thyme
1 tbs olive oil
Salt, pepper, and parsley

Method:

Step 1: Sauté onion and garlic in olive oil.
Step 2: Add mushrooms, potatoes, and seasoning and stir occasionally.
Step 3: Add vegetable broth, let it come to a boil. Simmer for 20-25 minutes, till potatoes are soft. 
Step 4: Blend until the mixture is smooth. Add more seasoning as per your taste.
Step 5: Garnish with parsley.
