Ingredients (Serves 8-12)

  • 250 g digestive biscuits
  • 75 g unsalted butter, softened
  • 350 g Nutella (room temperature)
  • 100 g toasted hazelnuts, chopped
  • 500 g cream cheese (room temperature)

Method

Step 1: Prepare the Base

Crush the digestive biscuits in a food processor. Add butter and 1 tablespoon (15 ml) of Nutella, then blend until the mixture begins to stick together. Mix in 25 g (about 3 tablespoons) of chopped hazelnuts and pulse again until sandy in texture.

Step 2: Set the Crust

Put the mixture in a 23 cm (9-inch) springform tin and press it evenly with the help of a spoon or the back of your hands. Chill in the fridge as you prepare the filling.

Step 3: Make the Filling

Add cream Cheese and icing sugar in a bowl and beat it till it's smooth. Add the remaining Nutella and mix well. Make sure that Nutella is fully combined with the cream cheese.

Step 4: Spread Nutella on Cheesecake

Spread the Nutella cream mixture evenly over the chilled base. Garnish with the rest of the hazelnuts and keep it in the refrigerator for at least 4 hours, or overnight for best results.
