NEW DELHI: When you’re trying to lose weight, meals can often feel like a dilemma—satiating enough to keep hunger at bay, yet light enough to support a calorie-controlled routine. Enter amla rasam rice, a one-pot dish that turns humble ingredients into something nourishing and comforting in just minutes. Inspired by South Indian rasam but with a tangy amla twist, this recipe brings together rice, lentils, spices and Indian gooseberry (amla) in a single pot, making it a perfect no-fuss lunch or dinner option when you’re short on time and focused on your weight-loss goals. What makes it especially appealing is its simplicity—minimal oil, plenty of flavour and a natural digestive boost from amla—so you get a meal that feels wholesome without weighing you down.

WHAT YOU’LL NEED

[SERVES 2-3]

Main ingredients:

  • 1-2 fresh amlas, chopped

  • 1-2 ripe tomatoes, chopped

  • 1 cup rice (washed)

  • ¼ cup toor dal (optional, for protein & texture)

  • Water (as needed for cooking)

SPICES & FLAVOUR BUILDERS:

  • Garlic cloves (2-3)

  • Black peppercorns (½ tsp)

  • Cumin seeds (½ tsp)

  • Coriander seeds (½ tsp)

  • Rasam powder (1-2 tsp)

  • Salt to taste

  • A little ghee or oil for tempering

GARNISH

(OPTIONAL):

  • Fresh coriander leaves

HOW TO MAKE AMLA RASAM RICE

Prep the base: Chop amla and tomatoes into small pieces. Traditionally, garlic, black pepper, cumin and coriander seeds are crushed with a mortar and pestle—but you can toss them all into a blender for a smooth paste that forms your flavour base.

Tadka (tempering): Heat a teaspoon of ghee or oil in a pan over medium heat. Add your spice paste and sauté briefly until fragrant. Add rice and dal. Stir in the washed rice and toor dal (if using). Sprinkle in rasam powder and salt, coating the grains.

Cook together: Add enough water to cover the rice and dal generously (about 3-4 cups, depending on the rice you use). Toss in a few extra pieces of chopped amla for brightness. Close the pot or pressure cooker and cook until the rice and dal are soft and well-blended.

Finish and serve: Once done, fluff the rice gently and garnish with fresh coriander. Serve warm for a light yet satisfying meal.
